 I have been on a roll with Pinterest and recipes these last few days! Here is a husband approved dinner, crock pot recipe that was super easy and delicious! Crockpot-Brown-Sugar-and-Balsamic-Glazed-Pork-Tenderloin

Kale-Artichoke Dip

Need something to take to a party that isn't super high in fat? Try this amazing Dip!

1 1/2 cups of Kale
1/4 cup artichoke hearts
4 oz non fat cream cheese
1/2 cup shredded swiss cheese
1/2 cup milk (I used almond milk and it didn't change the taste)
1/4 grated parmesan
1 minced garlic clove
a dash of cayenne, Worcestershire sauce and salt

Directions: Chop kale and artichoke hearts and combine them with all the other ingredients and saute them in a pan for about 7 minutes on low heat. Stir often and serve with crackers or pita chips! Enjoy!



It is almost summer and you know what that means, GRILL TIME: We absolutely love to use our grill for dinners! Here is one we made the other night that was AMAZING!!!!

Barcelona Chicken:
Prep Time: 15 minutes
Marinating time 4-6 hours or as long as 12 hours
Grilling time 30-40 minutes
Ingredients:
Marinade: 5 Scallions, cut into 1 inch pieces
1 cup of lightly packed fresh basil leaves (we used Sweet Basil because we didn't have fresh)
3 Large Garlic Cloves
2 serrano chile peppers, lightly chopped (we left these out because I don't do spicy LOL)
1/4 cup EVVO (Extra Virgin Olive Oil)
2 tablespoons sherry vinegar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 whole chicken 4-5 pounds (we just got legs and thighs from Whole Foods) 
1. To make the marinade: In a food processor (I used my Magic Bullet) or blender, combine the marinade ingredients and process to a smooth paste, 1-2 minutes
2. Cut the chicken into pieces, place in a bowl or plastic bag and pour the marinade on top
3. Grill Away! and Enjoy!
On the side we had a Super Foods Salad from Whole Foods and Corn on the cob. I would love to hear if you make it yourself!
